  • 2 cups fresh baby spinach
  • 1/2 inch fresh ginger (peeled)
  • 1 tablespoon fresh lemon juice

Step 1: Prep & Load Your Blender
  1. First, peel your very ripe banana and the fresh ginger. There's no need to chop the baby spinach.
  2. Combine all your ingredients into your blender. Start with the liquid – your milk or dairy substitute – then add the banana, spinach, ginger, fresh lemon juice, and finally, the ice cubes.
Step 2: Blend to Perfection
  1. Secure the lid on your blender. Start on a low speed to incorporate everything, then gradually increase to high.
  2. Blend until the mixture is completely smooth and wonderfully creamy, with no visible bits of spinach remaining. If needed, scrape down the sides with a spatula and continue blending.

Notes

For optimal sweetness and creaminess, always use very ripe bananas, preferably frozen. For a thicker smoothie, add more frozen fruit; for a thinner consistency, add more liquid. Best enjoyed immediately, but can be stored in an airtight container in the fridge for up to 12-24 hours. For extra satiety, consider adding a tablespoon of nut butter, flaxseed, hemp seeds, chia seeds, or a quarter of an avocado.
