Ingredients
  

Meat and Beans
  • 1 lb ground beef or turkey You can use either ground beef or turkey.
  • 1 can (15 oz) black beans, drained and rinsed
Salsa and Tacos
  • 1 can (16 oz) salsa
  • 8 pieces corn tortillas
Cheese and Toppings
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream (optional) Optional, for serving
  • to taste chopped cilantro for garnish (optional) Optional, for serving
Seasoning
  • 1 tsp taco seasoning Add more for a spicier taste.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat, then add taco seasoning, black beans, and salsa. Stir until well combined and heated through.
Layering
  1. In a baking dish, layer 3 tortillas on the bottom.
  2. Spoon half of the meat mixture over the tortillas, then add a layer of cheese.
  3. Repeat the layering process, finishing with tortillas and cheese on top.
Baking
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let it cool for a few minutes before serving with optional sour cream and cilantro.

Notes

Taco Lasagna is best served hot. Slice it into squares and serve directly from the baking dish. Adding a dollop of sour cream and a sprinkle of chopped cilantro enhances its flavor. Consider serving with tortilla chips for extra crunch. To store, let it cool completely, cover tightly, and refrigerate for 3 to 4 days, or freeze for up to 2 months.
