Ingredients
  

For the lasagna
  • 1 pound ground beef Can substitute with ground turkey or chicken for a lighter version.
  • 1 can refried beans Can substitute with black beans for a different texture.
  • 2 cups salsa Use spicy salsa for a kick.
  • 9 pieces lasagna noodles
  • 2 cups shredded cheese Pepper jack cheese can be used for more spice.
  • 1 teaspoon taco seasoning
  • 1 cup corn Optional ingredient.
  • 1 cup diced tomatoes Optional ingredient.
  • Chopped green onions For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat, then drain excess fat. Stir in taco seasoning.
  3. In a large bowl, combine refried beans and salsa.
Layering
  1. Spread a thin layer of the bean mixture on the bottom of a baking dish.
  2. Layer three lasagna noodles over the sauce.
  3. Add half of the seasoned beef, then half of the remaining bean mixture, and sprinkle with cheese.
  4. Repeat the layers, finishing with noodles, the bean mixture, and cheese on top.
Baking
  1. Cover with foil and bake for 30 minutes.
  2. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  3. Let cool slightly before slicing.
  4. Garnish with chopped green onions before serving.

Notes

This dish goes well with a side of tortilla chips or a fresh salad. Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for longer storage.
