  • 8 pieces tortillas
  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the onion and garlic until softened.
  3. Add the ground meat and cook until browned. Season with taco seasoning, salt, and pepper.
  4. Stir in the black beans and diced tomatoes, letting them simmer for 5 minutes.
Assembly
  1. In a baking dish, layer the tortillas, meat mixture, and cheese.
  2. Repeat the layers, finishing with cheese on top.
Baking
  1. Cover the dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  3. Let cool for a few minutes before slicing.

Notes

Serve Taco Lasagna hot, allowing each person to help themselves. It pairs well with a green salad, sour cream, or guacamole. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave until warm. Customize with extra vegetables or gluten-free corn tortillas.
