Ingredients
  

Potato Mixture
  • 3 lb sweet potatoes (peeled and cubed)
  • 0.5 cup unsalted butter (melted)
  • 0.5 cup milk
  • 0.333 cup packed brown sugar
  • 2 large eggs (lightly beaten)
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp salt
Streusel Topping
  • 0.333 cup all-purpose flour
  • 0.5 cup brown sugar
  • 4 Tbsp unsalted butter (melted)
  • 1 cup chopped pecans

Method
 

Potato Mixture
  1. Begin by boiling the sweet potatoes in a large pot until they are tender. Drain and mash them in a mixing bowl.
  2. Add the melted butter, milk, brown sugar, beaten eggs, vanilla extract, cinnamon, and salt. Mix until smooth and well combined.
Streusel Topping
  1. In another bowl, combine the flour, brown sugar, melted butter, and chopped pecans. Mix until crumbly and spread this mixture over the sweet potato mixture.
Baking
  1. Preheat the oven to 350°F (175°C). Spread the sweet potato mixture in a greased baking dish.
  2. Top it with the streusel topping and bake for about 30 minutes or until the top is golden and crispy.

Notes

For smoother texture, make sure to mash the sweet potatoes thoroughly. You can use maple syrup instead of brown sugar for a different flavor. If you prefer a lighter casserole, use less butter and replace some of the milk with a plant-based alternative.
