Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and vanilla extract. Then mix in the softened cream cheese until well combined.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the chopped strawberries gently.
Baking
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool before serving.
Notes
These cookies are best served warm, but they are also delicious at room temperature. For a pretty finish, lightly dust the tops with powdered sugar before serving. To store, keep in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. Freeze for longer storage, up to 3 months.
