  • 1/2 teaspoon baking soda

Wet Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened Ensure it is at room temperature for easy mixing.
Mix-ins
  • 1 cup chopped strawberries Chop into small pieces to blend well.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the egg and vanilla extract. Then mix in the softened cream cheese until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the chopped strawberries gently.
Baking
  1. Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until the edges are golden brown.
  3. Allow the cookies to cool before serving.

Notes

These cookies are best served warm, but they are also delicious at room temperature. For a pretty finish, lightly dust the tops with powdered sugar before serving. To store, keep in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. Freeze for longer storage, up to 3 months.
