  • 1 cup cream cheese, softened Ensure it is at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt until blended.
  3. In another large bowl, cream together the softened butter, cream cheese, granulated sugar, brown sugar, and vanilla until the mixture is light and fluffy.
  4. Gradually blend the dry ingredients into the wet mixture, mixing until just combined.
  5. Gently fold in the chopped strawberries with a spatula.
Baking
  1. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes, or until the edges are golden brown.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag or container for up to three months.
