  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • 1/2 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional) Add for extra sweetness and texture
  • 1/2 teaspoon cinnamon Adjust according to preference
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender, about 15-20 minutes. Drain and mash.
  3. In a large bowl, combine mashed sweet potatoes, brown sugar, milk, melted butter, vanilla extract, and beaten eggs. Mix until smooth.
  4. Stir in cinnamon and salt.
  5. Pour mixture into a greased baking dish.
  6. In a separate bowl, mix chopped pecans with remaining butter and brown sugar. Sprinkle this mixture evenly over the sweet potato mixture.
  7. (Optional) Add mini marshmallows on top.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until golden brown.

Notes

Serve warm as a side dish during holidays or family meals. Pairs well with roasted meats, green beans, or a fresh salad. You can also enjoy it on its own as a comforting treat.
