Ingredients
  

Main Ingredients
  • 12 pieces lasagna noodles
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup salsa
  • Cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook lasagna noodles according to package instructions and set aside.
  3. In a large skillet, cook the diced onion and garlic until soft.
  4. Add ground beef or turkey and cook until browned.
  5. Stir in black beans, corn, diced tomatoes, and taco seasoning; mix well.
Assembly and Baking
  1. In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom.
  2. Layer 3 lasagna noodles, followed by half of the meat mixture and a third of the cheese.
  3. Repeat the layers, ending with a layer of noodles topped with salsa and the remaining cheese.
  4. Cover with foil and bake for 25 minutes.
  5. Remove the foil and bake for an additional 15 minutes.
  6. Allow to cool for a few minutes before slicing.
  7. Garnish with cilantro if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven at 350°F (175°C) or in the microwave. Feel free to add vegetables like bell peppers or spinach for extra nutrition. For a spicier kick, add some diced jalapeños to the meat mixture. Can easily be made vegetarian by omitting the meat and using more beans or veggies.
