Preparation
- Preheat the oven to 350°F (175°C).
- Cook lasagna noodles according to package instructions and set aside.
- In a large skillet, cook the diced onion and garlic until soft.
- Add ground beef or turkey and cook until browned.
- Stir in black beans, corn, diced tomatoes, and taco seasoning; mix well.
Assembly and Baking
- In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom.
- Layer 3 lasagna noodles, followed by half of the meat mixture and a third of the cheese.
- Repeat the layers, ending with a layer of noodles topped with salsa and the remaining cheese.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes.
- Allow to cool for a few minutes before slicing.
- Garnish with cilantro if desired.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven at 350°F (175°C) or in the microwave. Feel free to add vegetables like bell peppers or spinach for extra nutrition. For a spicier kick, add some diced jalapeños to the meat mixture. Can easily be made vegetarian by omitting the meat and using more beans or veggies.
