Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain the fat.
- Stir in the black beans, corn, diced tomatoes, taco seasoning, salt, and pepper. Cook for another 5 minutes.
Layering
- In a baking dish, spread a layer of the beef mixture.
- Follow with a layer of tortillas, then a layer of cheese and sour cream.
- Repeat the layers until all ingredients are used, finishing with cheese on top.
Baking
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
Serve hot with sides like a garden salad, tortilla chips, or guacamole. Store leftovers in the refrigerator for up to 3-4 days or freeze for up to 2 months.
