Main Ingredients
  • 9-12 pieces tortillas Use corn or flour tortillas based on preference.
  • 1 pound ground beef Can be replaced with more beans for a vegetarian version.
  • 1 can black beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 can diced tomatoes
  • 1 packet taco seasoning Homemade version can be made if desired.
  • 2 cups shredded cheese Cheddar or Mexican blend.
  • 1 cup sour cream
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro For garnish and flavor.
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain the fat.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, salt, and pepper. Cook for another 5 minutes.
Layering
  1. In a baking dish, spread a layer of the beef mixture.
  2. Follow with a layer of tortillas, then a layer of cheese and sour cream.
  3. Repeat the layers until all ingredients are used, finishing with cheese on top.
Baking
  1. Cover with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  3. Garnish with chopped cilantro before serving.

Notes

Serve hot with sides like a garden salad, tortilla chips, or guacamole. Store leftovers in the refrigerator for up to 3-4 days or freeze for up to 2 months.
