- Pat chicken breasts dry and make three shallow slits on each side.
- Rub garlic into the chicken slits, then season both sides with salt, pepper, and half of the dried oregano.
- Heat olive oil in a large cast iron skillet, sear chicken on both sides, then add white wine and reduce by half.
- Add lemon juice, chicken broth, and remaining oregano, then cover and braise chicken for 5-6 minutes per side, until it reaches 165°F.
- Uncover, top with chopped onions, tomatoes, and olives, then cook for 3 more minutes. Garnish with parsley and optional feta cheese.
