  • 4 breasts boneless, skinless chicken
  • 2 tablespoons minced garlic or garlic paste
  • Kosher salt
  • Black pepper
  • 1 tablespoon dried oregano divided
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup dry white wine
  • 1 large lemon juiced
  • 1/2 cup chicken broth
  • 1 medium red onion finely chopped
  • 4 small tomatoes diced, about 1 1/2 cups
  • 1/4 cup sliced green olives
  • Handful fresh parsley stems removed, leaves chopped
  • Crumbled feta cheese (optional)

Method
 

Main Instructions
  1. Pat chicken breasts dry and make three shallow slits on each side.
  2. Rub garlic into the chicken slits, then season both sides with salt, pepper, and half of the dried oregano.
  3. Heat olive oil in a large cast iron skillet, sear chicken on both sides, then add white wine and reduce by half.
  4. Add lemon juice, chicken broth, and remaining oregano, then cover and braise chicken for 5-6 minutes per side, until it reaches 165°F.
  5. Uncover, top with chopped onions, tomatoes, and olives, then cook for 3 more minutes. Garnish with parsley and optional feta cheese.

This one-skillet meal is perfect for a quick weeknight dinner. Adjust seasonings to taste and feel free to add other Mediterranean-inspired vegetables.
