Dressing
  • 2 teaspoons Dijon mustard
  • 2 Tablespoons fresh lemon juice
  • 2 teaspoons Worcestershire sauce
  • 3/4 cup mayonnaise
  • 2 teaspoons minced garlic
  • 1 teaspoon anchovy paste
  • 1/3 cup finely grated Parmesan cheese
Salad
  • 8 oz. uncooked pasta such as rotini or penne
  • 2 hearts Romaine hearts
  • Shredded rotisserie chicken or chopped chicken breasts
  • Croutons (optional)
  • Parmesan cheese for serving

Method
 

Preparation
  1. Whisk Dijon, lemon juice, Worcestershire, mayonnaise, garlic, and anchovy paste in a medium bowl until combined. Stir in grated Parmesan and pepper, then set the dressing aside.
  2. Bring a large pot of salted water to a boil, cook pasta until al dente (about 10 minutes), then drain and transfer to a large serving bowl.
  3. Cut Romaine hearts into 1-inch pieces; add them and your chosen protein to the bowl with the pasta.
  4. Add the prepared dressing and toss to combine. Incorporate croutons (optional) and garnish with Parmesan cheese. Serve immediately or refrigerate until ready.

Notes

For best results, prepare the dressing ahead of time to allow flavors to meld. Leftovers can be stored in the refrigerator for up to 2-3 days.
