Preparation
- Preheat the oven to 350°F and prepare a 9x5 inch loaf pan by greasing and flouring it.
Mixing
- In a medium bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
- In a large bowl, whisk together the oil, sugars, eggs, and vanilla extract until smooth.
- Stir the mashed bananas and pumpkin puree into the wet ingredient mixture.
- Gently fold the flour mixture into the wet ingredients using a rubber spatula or wooden spoon, then stir in the chopped nuts.
Baking
- Pour the batter into the prepared pan and bake for 50-60 minutes, or until an inserted toothpick comes out clean and the top feels firm to the touch.
Notes
Ensure you use pumpkin puree, not pumpkin pie filling, for the best results. The optional walnuts add a nice crunch, but can be omitted if preferred. For an extra moist bread, avoid overmixing the batter.
