  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup milk or chicken broth
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled (or 6 oz of real bacon bits)
  • 1/4 cup chopped green onions, for garnish (optional)
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Lightly grease your crockpot with cooking spray.
  2. Add the chicken breasts in a single layer at the bottom.
  3. In a medium bowl, beat the softened cream cheese with the dry ranch dressing mix until smooth. If it feels too thick, add a tablespoon of milk.
  4. Spread the cream cheese mixture evenly over the chicken breasts.
  5. Pour the milk or chicken broth over everything.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
  2. Once the chicken is ready, shred it in the crockpot using two forks.
  3. Mix in the shredded cheddar cheese and crumbled bacon, stirring until well combined and the cheese is melted.
  4. Cover the crockpot again and let it sit for about 5-10 minutes.
Serving
  1. Sprinkle with chopped green onions before serving. Enjoy it on buns, over rice, in lettuce wraps, or as a dip.

Notes

For extra flavor, add garlic powder or garlic. For heat, add hot sauce or crushed red pepper flakes. Use a slow cooker liner for easy cleanup. Swap cheddar cheese for other types if desired.
