- In a skillet over medium-high heat, cook the bacon until crispy. Remove and drain on paper towels.
- In the same skillet, add the diced potatoes and cook until golden and tender.
- Add the scrambled eggs to the skillet and cook until just set. Season with salt and pepper.
- Crumble the crispy bacon and add it to the egg and potato mixture along with the shredded cheddar cheese.
Assembly
- Warm the flour tortillas in the skillet or microwave.
- Divide the filling between the two tortillas, wrap them into burritos, and serve with salsa or hot sauce if desired.
Notes
Serve warm, either whole or sliced in half. These burritos can also be paired with fresh fruit or hash browns for a complete breakfast. For extra flavor, consider adding sautéed vegetables or jalapeños.
