  • 4 fillets Salmon fillets
  • 2 tablespoons Butter
  • 3 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Fresh basil, chopped For garnish
  • to taste Salt
  • to taste Pepper
  • 1 cup Heavy cream Can substitute with half-and-half for added richness.

Method
 

Cooking
  1. In a skillet, melt butter over medium heat.
  2. Season salmon fillets with salt and pepper, then add them to the skillet. Cook until golden brown on both sides and cooked through.
  3. Remove salmon and set aside.
  4. In the same skillet, add minced garlic and cherry tomatoes. Cook until tomatoes are soft.
  5. Stir in spinach until wilted.
  6. Pour in heavy cream and add parmesan cheese, stirring until smooth.
  7. Return salmon to the skillet, spooning sauce over the top.
  8. Garnish with fresh basil before serving.

Notes

Best served immediately. Enjoy with a side of rice, pasta, or crusty bread. Store leftovers in an airtight container for up to 2 days. Reheat gently.
