Cozy Stuffed Pepper Soup

  • 1 lb lean ground beef
  • 2 tbsp olive oil divided
  • 1 small yellow onion chopped (about 1 cup)
  • 1 cup chopped red bell pepper about 1/2 medium pepper
  • 1 cup chopped green bell pepper
  • 2 cloves garlic minced
  • 2 cans petite diced tomatoes (14.5 oz each)
  • 1 can tomato sauce (15 oz)
  • 1 can low-sodium beef broth (14.5 oz)
  • 2 1/2 tbsp fresh parsley chopped, plus more for garnish
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 cup uncooked long grain rice white or brown, cooked separately
  • cheddar or mozzarella cheese for serving, optional

Method
 

  1. Heat 1 tbsp olive oil in a large pot over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat.
  2. Heat remaining olive oil in the same pot. Add chopped onion, red and green peppers, and sauté for 3 minutes until softened. Add garlic and cook 30 seconds.
  3. Stir in diced tomatoes, tomato sauce, beef broth, parsley, basil, oregano, and the cooked beef. Bring to a light boil.
  4. Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
  5. Meanwhile, cook the rice separately according to package directions.
  6. When ready to serve, spoon rice into bowls and ladle soup over it. Top with cheese and garnish with parsley if desired.

Notes

For a vegetarian version, use plant-based ground meat and vegetable broth. To freeze, omit rice and store it separately. Add cauliflower rice for a low-carb alternative.
