Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the softened cream cheese, 1/4 cup granulated sugar, and vanilla extract until smooth.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In a separate bowl, cream together the softened butter and the remaining sugar until light and fluffy.
- Gradually add the cream cheese mixture to the butter mixture, mixing until well combined.
- Slowly incorporate the dry ingredients into the wet mixture until just combined.
- Scoop the dough onto the prepared baking sheet, spacing them evenly.
Baking
- Bake for 10-12 minutes or until golden brown.
- In a small bowl, mix together 1/2 cup of sugar and 1 tsp of cinnamon for the coating.
- Once the cookies are out of the oven, let them cool slightly, then roll them in the cinnamon-sugar mixture.
- Allow to cool completely before serving.
Notes
Serve warm or at room temperature. For extra indulgence, pair with ice cream or a drizzle of chocolate sauce. Store in an airtight container for up to a week, or refrigerate for longer freshness.
