Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 eggs
  • 1 cup granulated sugar
  • 1 cup crushed pineapple with juice
  • ½ cup melted butter
  • 1 tsp vanilla extract
  • 1½ cups pineapple chunks
  • 2 cups whipped cream
  • ½ cup toasted shredded coconut

Instructions

  1. Preheat oven to 350°F and grease two 8-inch cake pans.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until fluffy. Add butter, vanilla, and crushed pineapple.
  4. Fold dry ingredients into wet mixture until just combined.
  5. Divide batter between pans and bake 25–30 minutes until golden.
  6. Cool 10 minutes in pans then transfer to rack to cool fully.
  7. Spread whipped cream on one cake layer. Add pineapple chunks.
  8. Top with second layer, more whipped cream, coconut, and pineapple.
