  • 2 cloves Garlic (Minced.)
  • 1 teaspoon Ground cumin (Adds a warm flavor.)
  • 1 teaspoon Chili powder (For a spicy kick.)

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the diced onion and minced garlic until soft and fragrant, about 3-4 minutes.
  3. Add the ground beef (or turkey) to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  4. Stir in the black beans, corn, salsa, cumin, chili powder, salt, and pepper. Let the mixture simmer for about 5 minutes.
  5. In a 9×13 inch baking dish, spread a thin layer of the meat mixture on the bottom. Place 2-3 corn tortillas over the meat mixture.
  6. Add another layer of the meat mixture on top of the tortillas, followed by a sprinkle of shredded cheese. Repeat the layering process until all ingredients are used, finishing with a layer of cheese on top.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  8. Let the lasagna rest for 10-15 minutes before slicing and serving. Garnish with fresh cilantro if desired.
