Why Make This Recipe

Mexican Lasagna is a fun twist on traditional Italian lasagna that combines savory flavors and textures. It’s easy to prepare, super satisfying, and perfect for both family dinners and gatherings. By layering rich beef, cheese, and delicious spices, you create a comforting dish that everyone will love. Plus, it’s a great way to add a little spice to your meal rotation!

How to Make Mexican Lasagna

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can diced tomatoes
  • 9 lasagna noodles
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • Chopped fresh cilantro for garnish

Directions:

  1. Preheat the oven to 375°F.
  2. In a large skillet, cook the ground beef over medium-high heat until browned, about 5-7 minutes. Drain excess fat.
  3. Add the onion and garlic to the skillet and cook for 2-3 minutes until softened.
  4. Stir in the chili powder, cumin, oregano, tomato sauce, and diced tomatoes. Simmer for about 10 minutes.
  5. Spread 1 cup of the meat sauce in the bottom of a 9×13 baking dish.
  6. Layer 3 lasagna noodles over the sauce, then top with half of the remaining meat sauce and 1 cup of each cheese.
  7. Repeat the layers of noodles, meat sauce, and cheese.
  8. Top with the remaining 3 lasagna noodles and the remaining meat sauce.
  9. Cover with foil and bake for 40 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  11. Let stand for 10 minutes before serving.
  12. Garnish with chopped fresh cilantro.

How to Serve Mexican Lasagna

Slice the Mexican Lasagna into squares and serve it hot. You can enjoy it on its own or pair it with a fresh salad or some tortilla chips. Feel free to add extra toppings like sour cream, jalapeños, or avocado for added flavor and texture!

How to Store Mexican Lasagna

Let the leftover Mexican Lasagna cool completely before storing it. Place it in an airtight container in the refrigerator. It will stay fresh for about 3-4 days. You can also freeze individual portions for up to 2 months. Just make sure to wrap it tightly with plastic wrap or aluminum foil before freezing.

Tips to Make Mexican Lasagna

  • You can use ground turkey or chicken instead of beef for a leaner option.
  • If you like it spicy, consider adding some diced green chilies or sliced jalapeños into the meat mixture.
  • Feel free to mix up the cheeses! Adding pepper jack cheese can give it an extra kick.
  • To save time, you can use no-boil lasagna noodles.

Variation

Try making a vegetarian version by replacing the ground beef with black beans, lentils, or sautéed vegetables. This way, you can enjoy the same delicious flavors without the meat.
